You could make this ahead and keep in the freezer if you like. Just soften before serving.

variations for dietary requirements:

dairy free / vegan – Stir peanut butter into banana ice cream instead.

peanut-free – You could you any nut butter. Almond, pistachio, hazelnut… the options are endless.

troubleshooting guide:

cream too icy – Allow to soften in the fridge for 15 minutes or so.

too sweet– Some commercial peanut butters are too sweet for me. You could serve with some sea salt flakes. Or try a PB without added sugar.

PB not crunchy enough? – You could toss in a handful of roughly chopped roasted peanuts as well for a bit more texture.

serving suggestions

Perfect as is. Although you could chop up a few peanut butter cups and add them as well for the ultimate PB extravaganza. Some chocolate chunks or chips would also be at home in this ice cream.

leftover potential:

Best eaten withing 24 hours of making. But it will keep in the fridge for a month or so. Just remember to allow it to soften at room temperature for 15 minutes or so before serving.
