You can easily halve, double or triple this recipe. The freezing time will depend on the type of container. If it has a large surface area the ice cream should freeze in about the same time, but a compact with the larger quantities container could take up to 12 hours.

prepare ahead?

I tend to make this the day before or get up really early that morning if I’m serving it for dinner. I think the flavour and texture of most ice cream is best within the first 24 hours of being made. After that you start to get ice crystals forming. If you must make it in advance more than 24 hours, just remember to get it out of the freezer to soften up about 15 minutes before you’re ready to serve.

variations for dietary requirements:

dairy-free / vegan – Replace the butter in the dough with macadamia or other nut oil. It won’t ‘cream’ with the sugar properly but it will still be OK. Make a batch of banana ‘ice cream’ with 3-4 bananas and serve sprinkled with the cookie dough and some dark chocolate chunks, if using.

gluten-free – Replace the flour with your favourite gluten-free flour or use almond meal.

troubleshooting guide:

cream too icy – Sounds like not enough sugar. Allow to soften in the fridge for 15 minutes or so.

too sweet-The secret to getting the ice cream to stay creamy is the high sugar content. lf you find it too much try making this with the yoghurt base instead of the vanilla base.

cream has rough texture – If it’s little ice crystals, see the solution above for too icy. If the cream itself seems a bit chunky it sounds like either the cream wasn’t fresh to begin with OR you’ve over whipped it. Not much can be done at this stage, next time whip less.

want to bake cookies? – Don’t use this recipe, there aren’t any eggs or baking powder in the cookie dough which means its safe and delicious to eat raw but won’t bake very well. See link below for a cookie recipe you can bake.

no brown sugar? – Use regular sugar in the cookie dough, the colour won’t be as dark but it will still be super tasty!

cookie dough too hard – When it freezes, it does tend to firm up. Just allow to soften for a while and you’ll be happy.

With all that’s going on with this ice cream I prefer to eat it on its own.

leftover potential:

Best eaten withing 24 hours of making. But it will keep in the fridge for a month or so. Just remember to allow it to soften at room temperature for 15 minutes or so before serving.
