Banana ‘Ice Cream’
This had to be the simplest ice cream recipe ever. The inverted commas are because there isn’t any cream so it technically isn’t an ice cream.
Feel free to play around with the flavourings. You could pretty much add anything that takes your fancy.
The riper your bananas are, the more intense the flavour will be.

takes: 6h freezing + 10m
2 ripe bananas
1. Peel and chop bananas and freeze in a freezer bag.
2. Remove bananas from the freezer about 10 minutes before your ready to eat.
3. Put bananas in your food processor.
4. Whizz until you have smooth creamy texture. It may take a little while if your bananas are too frozen so be patient!
Quantities for Different Serving Sizes
Pretty much I allow just one banana per person so feel free to play around with the quantity. Just don’t overload your food processor.
Prepare Ahead
Whenever I have bananas that are getting too black to eat, I pop them whole in the freezer for a rainy day. They’re also really handy for banana cake or banana bread. It’s a bit of a hassle having to peel the frozen bananas though, so if you’re more organised it helps to peel and chop the bananas and freeze in a plastic bag.
If you make too much banana ice cream just freeze in a container and then soften and whizz in the food processor again before serving.
Variations
short on time – serve fresh bananas with cream. Or skip the banana and use commercial ice cream.

Problem Solving Guide
too icy – your bananas are still a bit too frozen to process properly. Just leave for 5 minutes or so. Or if you’re in a hurry add a little water or cream to get things moving.
too banany– next time use less ripe bananas but for now try adding some cocoa powder or serve with melted chocolate sauce.
too soft– there’s a fine line between ice cream perfection and melted banana slush. Next time process less and eat more quicky. Freezing your serving containers for an hour or two before hand can also help.
Serving Suggestions
Great all alone or use pretty much anywhere you’d use vanilla ice cream.
Leftover Potential
Best eaten asap. Freeze leftovers in a container and then soften and whizz in the food processor again before serving.
